The Lungau Eachtling and Genuss Region Lungau
Famous far beyond the borders of the Lungau!
The Lungau is definitely the potato capital of Salzburg province, where half of the land dedicated to potato cultivation in Salzburg is to be found. Due to the climate and our vegetation, the Lungau is one of the best potato-growing areas in Austria. Currently, the Lungau plants about 150 hectares of potatoes, most of those grown according to organic guidelines.
The term “Eachtling” is Lungau dialect for “potato” and is used by Lungau farmers as a brand name. The all-natural soil has a good humus content and is quite sandy – the result of erosion of ancient rock – which makes it ideally suited for growing the very best potatoes. Using cultivation techniques handed down through the generations, top-quality potatoes with high-value plant proteins, many vitamins and important minerals are allowed to mature in the ground. With high nutritional value and a wide range of uses, the Lungau Eachtling meets the highest of expectations. As with all natural products, its taste and cooking characteristics not only depend on the variety, but also on climate conditions and location.
Aside from growing potatoes, the Lungau’s potato farmers have also specialized in production of first-class seed crops that are exceptionally disease-resistant and have outstanding germination characteristics.
In 2005, the Lungau region was awarded the prestigious title of ÖSTERREICHISCHE GENUSS REGION by the Austrian Ministry of Food .
You can purchase the cookbook Lungau Eachtling Recipes at all local and regional tourist offices in the Lungau for a price of Euro 9 (excl. postage and handling, in German).

Schafaufbratln during Harvest Festival in the Lungau
"Schafaufbratln" or "Schöpsernes" is how we refer to delicious meals profiling local mutton.
It is one of our region’s numerous culinary specialties, offered at numerous Lungau restaurants after the flocks have been driven back down to the valley in autumn.
Most inns and restaurants in participating Harvest Festival communities offer special dishes and beverages on a separate Harvest Festival menu. Often the innkeeper or his wife will cook for you personally. And it goes virtually without saying that the ingredients all come from this region, which means they are exceptionally fresh and high in quality.
The Schafbratl features mutton from sheep that have spent the summer grazing on the high pastures. It is then served as part of the main course with, for example, potatoes that have been roasted in the same pan, horseradish and lingonberries. perhaps accompanied by a Lungau-style coleslaw .

Culinary Treats also in Winter
If you want to enjoy a meal at a traditional alpine hut, the Lungau is definitely the place for you. 20 small, privately owned huts offer everything a skier could possibly wish for: homemade dishes such as cheese noodles, Lungau cheese-dumpling soup, Lungau Rahmkoch, country doughnuts, hearty Brettljause platters, as well as famous Kaiserschmarrn desserts. Places where you still find a tiled stove in a wood dining room and a host who will be delighted to stop by for a chat. Highly recommended, even away from the ski slopes.
Easter Butter and Easter Eggs
When Easter comes around, here in the Lungau we enjoy painting our eggs as well, though generally with natural dyes (onion peel, red beets, spinach, herbs....). Many Lungau households use older or more modern butter boards to make their own Easter Butter, or to make their regular butter a little bit prettier.
