Lungau farmer's roast

The Salzburg Lungau region, which is mostly located at an altitude of over 1,000 m, offers the best conditions for growing the Eachtling (potato) due to its geographical location and climatic conditions with low rainfall. In the sandy and stony soil, the tuber can obtain its vital substances and thus intensify its flavor. Depending on the variety, Lungau Eachtling potatoes are harvested between the end of August and the end of September.

What could be better than enjoying the fresh Eachtling locally at numerous delicacy weeks and traditional festivals during the farmers' autumn?

Ingredients

  • approx. 380g cooked potatoes
  • 1/2 onion
  • 75g cooked beef
  • 75g smoked meat
  • Salt, pepper to taste,
  • Caraway and marjoram
  • Mirrored egg

Preparation

  1. Slice the boiled and peeled potatoes.
  2. Cut the already cooked beef and smoked meat into bite-sized pieces.
  3. Finely chop the onion.
  4. Sauté the potatoes and add the chopped onion, diced beef and smoked meat and continue to fry.
  5. Season to taste with salt, pepper, caraway and marjoram. Stir frequently in the meantime until everything is roasted until golden brown.
  6. Heat a pan with oil for the fried egg and fry the fried egg in it.
  7. Add the fried egg to the finished Bauerngröstl and serve with fresh parsley

Tip for the recipe: A warm coleslaw or green salad is also recommended as a side dish.
