Blackberry Kaiserschmarren

Blue fingers and blue lips - a clear indication that the blackberries in the Lungau mountains are ripe. The small black fruits can be enjoyed in a variety of ways.

A particularly delicious combination is to serve the blackberries with a Kaiserschmarrn pancake. We are happy to share our "ruck-zuck" recipe à la grandma with you.

Ingredients

  • 4 eggs
  • 125 g flour
  • 125 ml milk
  • 1 pinch of salt
  • Sugar to taste
  • Blackberries to taste
  • Butter

Preparation

  1. Mix the flour with the salt and cold milk to form a thick batter.
  2. Then sloppily stir in the eggs.
  3. Heat the clarified butter in a pan. Pour the mixture into the pan and fry over a moderate heat with the pan covered.
  4. Turn the mixture and bake until done. Then divide the Schmarrn into pieces, add the blackberries and leave to stand for a few more minutes.
  5. Fold in the blackberries as desired, sweeten with powdered sugar and serve

TIP: The blackberry pancake tastes particularly delicious with a scoop of vanilla ice cream.
