Schnurraus

According to folk tradition, the Kasmandl is a little man with an icy grey color and a wrinkled face. It lives in the mountains in summer and when the dairyman or dairywoman returns to the valley from the mountain pastures, the Kasmandl comes to the mountain huts, searches for and collects what has been left behind to feed on during the long winter.

Every year on November 10th, the Kasmandl go from house to house and recite poems. They bring everyone delicious cream cheese and Schnuraus as a gift.

Ingredients

  • 250 g lukewarm milk
  • 500 g wheat flour 700
  • 40 g sugar
  • 2 pcs. eggs
  • 10 g salt
  • 0.5 pcs. Yeast (=1/2 cube of yeast)
  • 100 g raisins
  • Fat for frying

Preparation

  1. Prepare a yeast dough from the ingredients and then leave to rest for approx. 30 minutes
  2. Then cut off pieces of dough and shape them into pencil-thick strands
  3. Divide the dough into pieces and fry the individual pieces in hot fat until golden brown. The fat should be at approx. 160 degrees.
